cm228 Posted December 26, 2025 Posted December 26, 2025 I did a 5lb prime today. It was my first time trying it. Used the recipe from my pellet smoker. Turned out fantastic. Bought mine in from a butcher shop. I bought 10 lbs ($150) and had them split in half. I cut some ribeyes out of the other one. 3 Quote

She always tends to overcook beef roasts so this year she bought one from Whole Foods cooked to order. It was $170. but it was perfect! One of the best ones I've ever had. Pork is still the bargain protein. Farm next door has given up on dairy and is strictly raising beef. I only buy my ground beef from him, it's very good but buy my steaks and roasts at a butcher shop as I don't want frozen. Anyway, farmer's frozen burger has gone from 3 one lb packages for $10 to now $8. lb in the space of four years. A little more expensive than grocery store but his is way better with just enough fat content and I like to support him. A big reason for his price increase is there's only one slaughter/packaging facility and they've dramatically increased their prices. Buying a half just wouldn't work for us. Kids are grown and moved out, no other family to share with. Our Colorado mechanic has 12 kids who now have kids plus cousins, etc. Whole steer works for him😁. The annual Elk is also in the freezer. That ham looks delicious too. I fatten a few calves each year and butcher 1 so that we have plenty of beef in the freezer. For the most part pork is still a bargain, but I did have my wife buy a pork shoulder roat a few weeks back so that I could smoke it and make pork carnitas, and I was surprised by the cost. It too was much more expensive than I expected. 3 Quote

Different dynamic. I to do not like my steaks frozen. I will pick some up at grocery store if they look nice and are not a super high price. Growing up on the farm we always had freezers full of chickens, pork and beef. My god father ran a small feedlot they finished 200 or so head a year. His dad and brother had the small town red owl store also. So they would sell beef in 1/2s that is what we usually had plus 2 or three pigs turned into sausage and others cuts. There was always a huge waste of food where packages got to the bottom of freezer for a long time. Plus my mom was one to get flustered for an idea for meal and would cook items from a frozen state. Again I will not eat frozen steak or roast at home. 1 Quote

from H to 80 Posted December 27, 2025 Posted December 27, 2025 Prime rib is my favorite,we cook one every year during Christmas, it took several tries to get it perfect but we have it down now. First step is to season it the day beforehand, i use the better than bouillon beef base and Kinder's prime rib rub. Remove from the fridge and let it sit until it gets to room temperature. We cook it on a pellet smoker at 250 degrees,until it hits 120 internal temp then pull it off,cover it,and let it rest 30 minutes. Crank the smoker to 500 degrees and cook it to 130 degrees internal, maybe 10 minutes, let it sit another 30 minutes and dig in. 8 Quote

Normally hes made a rib roast or tip and they are so rare they are cold on inside. I like medium for roast/rib frankly. 2 years ago he guessed since didnt have thermometer. About 1/2" cooked center literally cold. We had to stick in a 400 oven for over a hour to even eat it. But he spent 2000 on some smoker so he knows what he is doing.....😲🤣 I want/like a good juicy turkey for Thanksgiving and a big and basted spiral ham with rolls for Christmas. Then beef for every other dinner...or lunch, on the other 363 days 1 Quote
