My wife makes a good cherry pie and a great pecan pie.The cherries for grandma’s pies came from the trees here on our home farm. IHKeith Posted March 8, 2022 Share Posted March 8, 2022 The key to a great pie is the crust, it has to be flaky and separable as well as compactable, crumbles when you break the layer of crust but comes back together easily while scraping up the crumbs, not a dough/bread like outer shell, my late grandmother was a a master of that craft, her pastry is a food group of it's own, my favourites are raspberry, blueberry and lemon merengue, apple with some cheese is pretty great as well, apple pie without some cheese is like a kiss without a squeeze 1 Quote Link to comment Share on other sites More sharing options...

There use to be a great restaurant near here, kid you not, a slice of pie was 3-3.5” Tall with another 1.5-2” of some sort of fabulous whipped cream goodness on top and then That had toasted coconut on it. Amazing crust. Huge. That being said, mom can make an apple pipe taste great from about any apple, any time of the year, frequently. My wife’s apple pie is slightttttly better, but it’s hard to come by since she only uses honey crisp apples, when they are in season, and those things cost about $1.50-$2 each around here. I could swear some poor guy asked his wife to make him a pie and she just dumped all the ingredients in a pan and baked it...she thought she was being spiteful and he ended up liking it.
