Great shot  of the old heading dog in the yards  !!!........Australia  by the look of the  water tanks......

...you can see the same thing in the New Zealand high country  stations...(as pictured ).......plenty of sheep......plenty of dogs......plenty of action  !!! and to see blade shearing in action , is quite something.......

Is mutton a staple in New Zealand ?  It’s a regional meat where I live. Not many people will eat it.

....sure is !!........and it is a major export item as well.....(lamb )......worth , last year over   3 Billion  dollars.......and   the New  Zealand Farmer  is totally at the mercy of  overseas marketing ......there are no farm  subsidies or   "handouts " of any  sort for our primary produce......what ever it may be.

Sheep meat   per se, is very popular in NZ........Roast  lamb  , for me is fine ,but I prefer roast beef !!!!......However, as I have had to forage through the cupboards over the years.......to make what passes for a lunch......sigh......Cold   roast lamb ...or hogget, is bloody good tucker in a sandwich.....along with a bit of pickle .....

The Poms buy a huge amount of NZ sheep meat....and during a couple of visits to their fair shores.......as a visiting NZ'er....lamb was cooked for the wife and I......It was bloody terrible !!.....never said so of course...but it stank like  you wouldn't believe....and I can see why a lot of folk don't buy   it ....:(...no idea why,.....

I was always told Mutton is a lamb that’s over a year old and not the preferred choice for cooking while lamb ( cooked right) is good. 

I have eaten lots of it in various places. 

In My Opinion  , Ok if it’s cooked right but terrible if it’s not.

Never had the opportunity to try lamb. 

I would think wrapping in bacon would be a must. Course I wrap everything in bacon?

Find a good seasioning and put on pellet grill.

Flying blind so could be totally off?

In the 1970s my sister and i raised sheep for our 4 h projects. I recall at state fair they used to have a vendor inside or just out of sheep building selling lamburger sandwiches (ground lamb and beef mixed together) it was really pretty good i thought at the time.
